L’Aventure Winery Harvest Internship 2025
L’Aventure Winery was founded in 1998 by Stephan and Beatrice Asseo. Originally from Bordeaux, the Asseo family owned multiple estates, where Stephan spent 17 years refining his craft. Known as a maverick vigneron, he sought creative freedom beyond AOC regulations. After searching globally, he discovered Paso Robles and fell in love with its unique terroir—rolling hills, deep calcareous soils, and maritime influences from the Templeton Gap—ideal for crafting world-class blends. Today, L’Aventure is renowned for its bold, high-end wines, earning widespread acclaim for innovation and craftsmanship.
About the Internship
Our internship provides a comprehensive, hands-on learning experience in all aspects of harvest and vinification. Our goal is for interns to gain firsthand knowledge of viticulture and winemaking through active participation in the 2025 vintage. Students will participate in the following:
Viticulture Job: lab analysis of fruit, leaf pulling, fruit drop, control of the canopy with trap wires, installation of shade cloths, weed control.
Winery Job: lab analysis of fermentation and completed wines, barrel topping, new barrel preparation for harvest, preparation of the winery for harvest, fruit processing, wine fermentation management, quality control tasting.
Participation of Harvest and Vinification of the 2025 Vintage: Fruit maturation (pre-pick olfactory and lab analysis), fruit sorting and processing, vinification (fermentation, pump over, and tank draining), lab analysis of fruit and fermentation, barrel filling, quality control tasting.
On-property housing available: $400/month per intern + shared electricity costs
